Which humans make the best base workers
The best human workers in Palworld are the ones with high Handiwork ratings — most captured humans carry Handiwork 1 or 2 plus Transporting, making them useful gap-fillers for crafting benches but weak at Mining, Kindling or Watering.

Typical work suitabilities
Handiwork, Transporting and Gathering are the common human traits. Elemental jobs like Kindling and Watering are almost never present.
Merchants and specialists
Captured merchants and Pal traders keep their names but lose their shop function — they are worker stock, not vendors.
Stamina and SAN
Humans burn SAN like Pals. Give them a hot spring and a Feed Box or they will slack and eventually flee.
Better than a Pal?
Rarely. A single Anubis outperforms four humans on Handiwork. Use humans for early bases before you have specialised Pals.
The other option
Humans can also be sent to the Meat Cleaver for Innovative Technical Manuals — a decision the game deliberately leaves to you.
